Recipe Repost: Hasselback Potatoes & Green Bean Salad

You thought I might actually post a new recipe on the blog??! Sadly No, this one is a repeat from 7 years ago, so I thought you may have forgotten about it :)  Au contraire, we spent a good portion of our evening in urgent care because the lil cutie spiked a 102 fever. Since no other symptoms were present, hoping it resolves itself ASAP.

REPOST from June 2010:
Ross has devised a weighted risk analysis of dinner preparation. Let me explain. If a meal is a lotta work, but doesn't taste really really great then, it's scored lower in the "Dinner Matrix." However, if a meal isn't too complicated AND tastes great then it gets a high score from Ross. Overall, the more time you spend on a meal, the better it should taste and if it doesn't then it's not a winner. My little ... well,  how about just my engineer. :)

I really have no idea what hasselback means, but these Hasselback Potatoes are so good. If you have 5 minutes to slice a potato and 40 minutes to wait while they bake, then these are a great side for you!
There is something so good about EVOO, rosemary, and sea salt. It makes my mouth sing. Definitely not my voice.

This green bean and tomato salad was really good too! Fresh basil, red onion, and red wine vinegar add such a nice flavor to the otherwise bland green beans. I don't know about you, but I eat with my eyes and when I see a whole bunch of colors on my plate. I. Must. Eat. Exhibit A.

Our protein was grilled jerk chicken. It had the perfect grill marks, but not much flavor because so much of the marinade cooked off. I would recommend a pre-made rub for a quick, easy flavor infusion. Just remember to watch the sodium!!

Paige at the Lake

Paige's favorite spot at the lake house this past trip may have been the back door. She loved standing up on the door and watching what was going on outside, while staying in the cold air conditioning. Roma would put her nose up to the outside and Paige would put her nose up to the window on the inside.

Plastic Pool

What do you do at the lakehouse when the water is still a bit chilly? Plastic Pool. The girls had a blast... most of the time. Let's just say it's also good that there were 2 identical pools for when the threenager Claire decided she didn't want little sister in the pool. Paige drank a fair amount of pool water. Better than the lake water? :)

Paige at 11 Months

My littlest baby girl is 11 months old! Paige Renae is pulling up on everything and getting more and more adventurous about letting go, but we haven't had first stand-alone steps yet. She is a great eater; pizza and avocado are her favorites, peas and eggs are not. Paige's hair is really filling in and she's got 7 (sharp) teeth. I am ramping down on milk production and this little is just eating more pizza to make up for it. It's going to be bittersweet when I get rid of all the bottle, pump, warmer, etc things in a few weeks.

Accidents Happen

At school pick-up yesterday this is the story we get:

"All the kids were out on the playground when Cole just dropped his pants and started peeing right out on the playground next to a tree. Well Claire saw this and decided that she was going to do the exact same thing, but it didn't quite go as smoothly. So we had to change clothes..."

I can't even make this stuff up.

Parent Teacher Conference

We met with Claire's teacher last week for a parent teacher conference. It's great to hear Miss Brenda's take on our three year old firecracker.  Can anyone take a guess on Claire's strengths/weaknesses?

Excels: Helping the teacher, vocabulary, perceptive, imaginative
Areas to Improve: Listening, using her words when she is upset, patience

Somehow it is reassuring when someone else gives their opinion, so it's not all the biased family view right? I mean, someone else noticed Claire doesn't listen? :)

Miss Brenda also told us some funny stories. One was about how Claire has to be the closest person to her during story time. Right up front. However, Miss Brenda said that Claire has a extreme fascination with nail polish and kept derailing the story to talk about Miss Brenda's feet and try to touch them. She said she no longer wears open toe shoes. haha.

Easter Egg Hunt

Sometimes I just don't get around to posting pictures very quickly. Le Sigh... Better late than never! Here are pictures from our Easter Egg hunt with our neighbor friends.

The kids were trying to convince us that they needed to open more eggs and they needed to eat some candy. 

They kids did a great job getting all the eggs; I only found one in the yard a couple days later :)

Movie Review: Hidden Figures

We watched the movie "Hidden Figures" tonight on Netflix and it was one of the best movies I've seen in quite some time. I totally recommend it! It's about a group of African American smarty pants ladies that work at NASA in the 60's. I'm guessing everyone has seen it already, but we don't get out for movies much anymore :)

Soccer, 3-year old Style

We have had a new purpose on Saturday mornings for the last few weeks-- SOCCER! Yep, YMCA 3-year soccer. So take everything you know about soccer and then shake it up and divide by 10, which is the number of kiddos on the team. It's seriously a new adventure every week.

Game #1 Claire wouldn't even get on the field without clinging to Mom or Dads leg and crying
Game#2-#3- Get on the field but sort of watch all others participate. Occasional bolts for Mom and Dad on the sideline
Game #5+ - On the field and running, but the minute other kids come after the ball she doesn't pursue the ball anymore. Does great at penalty kicks/throws. The heat of the summer is hard on the kids; Claire is usually red cheeked and "DONE" before the end of the game. "Mom I'm so tired..." The 30 minute practice before the 30 minute game is hard for most of the kiddos.

Claire is on team "Seattle". Coach Troy emails focus areas before the games each week. My favorite so far has been this:
1. Soccer is more fun when you're on the field
2. Soccer is more fun when you kick the ball
3. Soccer is more fun when you kick the ball into OUR goal

We're somewhere in between step 2 and 3 right now. Ross has had to give me a couple pep talks, encouraging me to suppress my inner competitiveness and find my zen. Check.
